My first vegan chocolate cake

Last Sunday, I took advantage of my time to try to cook what I don’t usually eat, namely vegan. Although non-vegan I am more familiar with dishes and starters than desserts. And since I love pastry, I made the most classic: a vegan chocolate cake.

The Recipe

  • 300g dark chocolate pastry
  • 280g flour
  • 80g brown sugar
  • 500 ml soy milk
  • 75 ml coconut oil
  • 100g applesauce
  • 1 c. vanilla coffee powder
  • 1/2 c. bicarbonate coffee
  • 1 pinch of salt
  • 1 c. baking powder

Preparation

  1. In a saucepan, heat the soy milk with vanilla for a few minutes over medium heat.
  2. Arrange the chocolate cut into pieces, pour over the hot mixture and mix gently to obtain a homogeneous result.
  3. Add coconut oil, applesauce and sugar, mixing each step.
  4. Then add salt, yeast, baking soda and sifted flour. Mix everything up and pour into an oiled and floured pan.
  5. Place in the oven at 180 degrees for 35 to 40 minutes, remove and cover with melted chocolate and sprinkle with coconut shavings.

 

The result

For regulars with classic chocolate cake, you’ll feel the difference in terms of taste. For those who would not be a fan of coconut, try another vegetable oil like almond oil for example.
To soften the taste, I will add a fake custard (recipe that I have not yet tested but that would be soon).
